Hampden Estate is renowned for its use of copper stills (four double retort pot stills), including the 1960 John Dore still, nicknamed "the elephant" for its massive size, and other Forsyth and Vendome stills. The distillation happens in batches, lasting about seven hours, producing a high-proof rum (around 82% ABV). A distinctive feature of their production is the use of "dunder," a residue from previous fermentation that is reused to inoculate the yeasts in the new fermentation, contributing to the aromatic complexity of the final product.
The Hampden Estate Pagos 2023 (batch #2) is a molasses-based rum distilled in copper pot stills and aged in tropical climate inside ex-sherry casks from the Spanish bodega Fundador before being bottled at 52% ABV, with no added sugars and at its natural color.

Color: Deep amber with mahogany highlights.
Aroma: Opening notes dominated by esters and overripe bananas, followed by notes of brie cheese, dried mushrooms, damp earth, and miso paste. Bitter-sweet sensations of dark chocolate and Black Forest cake emerge as well. In the background, a slight fruity and liqueur note reminiscent of sherry is noticeable.
Palate: Dry and assertive attack, with cheese, yeast, and nuts. Earthy aromas of fresh mushrooms follow, along with savory touches of green olives and dried meat. Classic Jamaican notes of green banana are present but in the background, balanced by a denser, fruitier sweetness reminiscent of port wine preserves and a firm tannic structure from the cask.
Finish: The finish is long, clean but complex, with fruity and spicy returns that linger discreetly.
