The company was founded in 1999 by Bernard and Rosemary Walsh with the goal of reviving and recreating the golden age of Irish whiskey. For those unfamiliar with Walsh Whiskey, the company has two main product lines: The Irishman and Writer’s Tears.
The Irishman Single Malt is a triple-distilled Irish single malt whiskey made exclusively from Irish barley. It is matured in American oak ex-bourbon barrels and European oak ex-sherry casks before being bottled at a classic 40% ABV.

Color: Pale gold.
Aroma: Light and fruity on the nose with notes of pear, peach, malt, and honey, followed by vanilla and a hint of licorice.
Palate: Fresh on the palate with flavors of custard, peach, honey, candied citrus, and butter cookies.
Finish: A smooth and moderately long finish with notes of pear, citrus, then barley malt and raisins.
