For over 25 years, the Italian independent bottler Wilson & Morgan has delighted us with its fine selections, and this latest release is no exception.
The Wilson & Morgan Caol Ila 2015 Sherry Cask Finish is a peated Single Malt Scotch Whisky distilled in 2015 at the namesake distillery on the island of Islay. It was initially matured in ex-bourbon casks before undergoing an 8-month finish in first-fill Oloroso sherry casks. The whisky was then bottled at 57.1% ABV, the historic strength used on British warships in the 19th century to “prove” the spirit's quality (100 proof), non-chill filtered and with natural color.

Aroma: On the nose, we get the classic Caol Ila profile — notes of smoke, iodine, and sea breeze, with hints of citrus, vanilla, and cinnamon.
Taste: On the palate, the peat carries us through the journey, joined by cinnamon, ginger, and spicy oak, a dusting of brown sugar, and the typical dry, smoky, and ashy character.
Finish: Good persistence, slightly dry and warming, with notes of beach bonfire, citrus, vanilla, briny olives, and a subtle hint of dark berries.
