Although the distillery was originally built in 1846, the structure we see today is the one completely rebuilt in the 1970s to meet the growing demand for single malt in blends. At that time, Diageo decided to demolish and fully reconstruct Caol Ila, equipping it with six stills. Today, a small part of the old distillery still remains — the three original warehouses.
The Caol Ila 8 Years Old Quercus Alba is a peated single malt Scotch whisky distilled in 2016 and matured in a total of five casks: four ex-bourbon and one virgin American white oak cask (quercus alba). It was bottled in 2024 at 48% ABV, non-chill filtered and with no added coloring, in a total of 1,866 bottles.

Color: Deep gold.
Aroma: On the nose, maritime peat takes the lead with notes of iodine and sea breeze, followed by citrus, vanilla, and subtle herbal hints.
Taste: On the palate it’s full-bodied, with smoky peat bringing ashy and vegetal notes, followed by vanilla, spices, and a slight tannic edge.
Finish: A lively and spicy finish with black pepper and ginger, then briny olives, citrus, and a touch of vanilla, all wrapped in coastal peaty tones.
