The Lindores Abbey Distillery was built in 2015 by Drew and Helen McKenzie Smith, with the buildings located right next to the original abbey site. The first new make spirit flowed from the stills on December 13th, 2017, marking the beginning of distillation. The distillery’s water source is the same one the monks would have used at the original abbey. Fermentation lasts a lengthy 117 hours in traditional wooden washbacks, and the stills were designed to maximize copper contact with the alcohol vapors.
The Lindores Abbey MCDXCIV is a single malt Scotch whisky distilled in 2017 and matured for about 3 and a half years in a combination of ex-bourbon, ex-sherry, and ex-red wine barriques from Burgundy prepared using the STR method (a process of shaving, toasting, and re-charring the casks). This whisky was finally bottled in 2021 at a classic 46% ABV, with no added colouring and non-chill filtered.

Colour: Lightly amber yellow.
Aroma: On the nose we find notes of malt and spices, cinnamon and pepper, followed by caramel, warm bread and fruit, with hints of apples, vanilla, and blueberries.
Taste: On the palate it is slightly oily, with notes of nutmeg and black pepper, caramel, vanilla, malt and apple, with hints of marzipan and chocolate.
Finish: Medium in length, spicy, with notes of ginger, black pepper, citrus, barley malt and mint with hints of caramel.
