At this unique Irish distillery founded by Mark Reynier, the ancient methodology of terroir is rigorously applied, where cutting-edge equipment meets time-honored knowledge. Locally grown Irish barley is paired with long fermentations, slow distillation, and a selection of exceptional casks.
Waterford The Cuvée is the first release in the single malt Irish whiskey series. The barley comes from different varieties: 32% Overture, 30% Irina, 19% Taberna, and 13% Propino, sourced from 25 Irish farms, all located in the southwest of Dublin. Fermentation lasts 136 hours, and the spirit was aged for exactly 4 years, 5 months, and 19 days in a mix of casks: American oak first-fill ex-bourbon, virgin oak, French oak ex-Vin Doux Naturel wine, and French oak. This Irish whiskey was bottled in 2021 at 50% ABV, unchill-filtered, and with no added coloring, in a release of 40,000 bottles.
