Mannochmore is located near Elgin, in the Speyside region. Founded in 1971, it is known for its clean, light and fruity malt spirit, typical of this region’s style. The distillery produces single malt exclusively for blends, with no official releases, but independent selections such as those by Signatory allow Mannochmore’s malt to be appreciated as a single malt in its pure form.
The 100 Proof series by Signatory features single malts bottled at 57.1% vol., the historic British proof strength, without chill filtration and with maturations designed to offer whiskies with a bold and authentic profile.
The Mannochmore 11 Years Old 100 Proof is a single malt Scotch whisky distilled in 2014 and matured for at least 11 years in first-fill ex-sherry Pedro Ximénez quarter casks and refill hogshead casks, before being bottled on 17 June 2025 at 57.1% vol. (100 proof), without added colour and without chill filtration.

Colour: Amber with pinkish highlights.
Aroma: On the nose there is an interesting balance between notes derived from ex-bourbon casks, such as vanilla and fruit, and those from sherry casks, like red fruits and chocolate. Of course, we also find the distillery’s characteristic maritime hint.
Taste: On the palate there are notes of raisins, plum, toffee, ginger, cinnamon and nutmeg, with hints of toasted hazelnuts and barley malt.
Finale: Medium persistence, sweet, with notes of cinnamon, dark chocolate and dried cherry, with hints of oak and sherry.
