This independent bottling by North Star Spirits, part of Series 027 for the tenth anniversary of the brand, celebrates its extraordinary longevity.
The Secret Highland (Park) 25 Years Old is a slightly peated single malt Scotch whisky distilled in 2000 and bottled in 2026. The whisky rested for a full twenty-five years in a single refill ex-Oloroso sherry hogshead — a second-fill cask that, over such a long period, enriches the spirit with dried fruit and spicy sweetness without ever overpowering its soul. It is bottled at natural cask strength (57.5% vol.), without chill filtration and at its natural colour, in a limited edition of only 221 bottles.

Nose: Complex and evocative, with heather peat and sea pebbles, chocolate and oats, smoked toasted almonds and orange marmalade, on a base of old wood.
Palate: Full and layered, with spicy ginger honey, juicy raisins and peat, followed by citrus zest, orange chocolate and a saline note.
Finish: Long and slightly salty, deeply floral, with notes of lemon and a persistent trail of light peat and honey.
